Blueberries

We went to the local blueberry farm today and I actually remembered my camera! The only problem was that as soon as I got my camera out to snap the shots I realized that my memory card was missing!!! Doh!! That was disappointing. Oh well. We got the blueberries and that's what counts. We picked 4 gallons in just over an hour. Timber ate most of the ones she picked but both Wyatt and Layton picked 1 gal each. The whole time Layton kept saying things like, "We're working!" and "This is fun!" and "I'm only picking the blue ones mommy!" I was amazed at how well he did (as good as my 12 year old!) I was so proud of his dedication and hard work.

My friend Ida asked me, "What are you going to do with all of those blueberries?"

Hum, good question. That thought hadn't crossed my mind. I guess I could make a cobbler, or I could can a bunch of them, or freeze them. What do you do with blueberries? Any super good recipes you'd like to share? What about blueberry syrup? Now that sounds yummy!

Yum. Blueberry cobbler sounds like a great idea!

I am on a blueberry kick right now. They are so delicious and a super healthy snack. I love them mixed with yogurt and granola.

Quick freeze them and make scones. That is my favorite thing of all!

Our native blueberries are almost ready for picking! Each day I go up to the meadow and check on them and can already pick a handful here and a mouthful there. I clean them up real good, measure them for recipes, and pop them right into the freezer. Of course, I bake with some of them while they are fresh. Enjoy!! ~karen

I love blueberries, I'd make pie and cobbler and freeze the rest. Maybe cook some down for preserves?

4 gallons of wild blueberries is A LOT of blueberries, and in just over an hour? You all are crazy pickers! You had very good help!

Thanks for the post on blueberries. It jolted my mind that I need to call our local blueberry farm to see how their crop is this year.

I do have a lot of recipes for blueberries...and I also have a recipe blog. In a day or two I will begin posting some of the recipes. If you would like, I'd be happy to let you know when I have the first recipe up on the blog.

i have done the blueberry syrup before...just some berries water and a little sugar...once that is cooked down it is like heaven.

We froze all of ours~Our favorite way to eat them is frozen with a little fresh cream and a drizzle of raw honey! Oh so yummy!!!

I made blueberry jam with Pomona's (?) Pectin and honey. It is super yummy on pancakes (and anything else).

I just used the simple jam recipe in the pectin package.

Then we freeze the rest in 2c. quantities for muffins in the winter or blueberry pancakes. It is super easy to freeze them. Wash, let dry on a towel, flash freeze on a pan, and load into bags.

My family LOVES blueberries! We picked over 50 pounds this year at a local farm, plus we have several bushes of our own that are producing well. :) I made a few batches of jam, froze a bunch and we ate a bunch too. :) I use them for syrup, blueberry pancakes, muffins, cobbler, pie, smoothies, put over ice cream...if a berry can be used, we use them. :) They are my husbands FAVORITE berry, so we have something blueberry just about every week. :)

I love blueberry jam on homemade bread with cream cheese, so I'll be making some jam very soon when we go picking.

The rest, I freeze, because my 2 year old is pretty much obsessed with frozen blueberries. They're his favourite snack (still frozen). He would probably eat a pint of them at a time if I let him.

Laura Jeanne- when my son was about 18 months he would eat 1-2 cups of frozen blueberries every day. They are a great snack for little ones!

I like to put the blueberries in the freezer. Then I'll usually take them out the following day..place some ina bowl and pour cold milk over it. The milk turns into a slushy..and it makes a nice, healthy frozen treat :) :) :) Have a nice week!!! Love and hugs from Oregon, Heather :)

I pick a ton of blueberries every summer too. I can up some blueberry jam (recipe from the pectin package) and freeze the rest. Then all year long I can use them for this AWESOME blueberry muffin recipe
Whenever I make these muffins, they are gone in minutes. Enjoy!

Oh Heather, I just love Blueberries :)

Here is a recipe that my Mom always made. It's wonderful and when my honey and I had our home up for sale this was in the oven. Needless to say, we sold our home within an hour :) Oh, also you can make Blueberry Syrup using the Blackberry/Raspberry Syrup recipe I posted on MJF :)

Blueberry-Cinnamon Cake

1/2-cup butter
1-cup sugar
2 eggs
2 1/2 cups sifted cake flour
1 1/2 teaspoon baking powder
1/2-teaspoon salt
½ cup milk
1 1/2 cup fresh blueberries
3 Tablespoons sugar mixed with 1-teaspoon cinnamon

Cream butter. Add 1-cup sugar and beat until light. Add eggs one at a time, beating well after each. Sift together flour, baking powder, and salt and add alternately with milk, beating until smooth. Fold in berries. Pour into a greased 9x9x2-inch glass-baking dish. Sprinkle with sugar-cinnamon mixture. Bake in moderate oven about 375 degrees for about 40 minutes. Cut into squares and serve hot.

Have you ever made that without cake flour? Using all-purpose or bread flour? Does it work?
Also, I saw your recipe for the syrup on MJF and saw the rave reviews of it as well! :)

we love to eat them frozen for snacks. I've also made freezer jam with blueberries that turned out yummy!
